Come along and join us for a full day of fascinating demos at the Taste Waterford Demo Stage, Waterford Festival of Food, sponsored by The Country Store.

There’ll be something for everyone – expert cake making, a food and wellness insight, celebrated producers collaborating on exciting dishes, a feel-good factor recipe, and a trio of West Waterford drink producers all under one roof!

See cooking demos, hear food stories, enjoy a Q&A, and try delicious tastings with our members and guests – an unforgettable experience celebrating Co. Waterford’s food and drink.

We kick off this year’s Taste Waterford demos with a recent gold and bronze winner at the Blas na hÉireann – The Irish Food Awards. Give an applause for Zsofia Turmezei of Sophie’s Taste Creations.

She was inspired to create handcrafted cakes and desserts in Tramore after her son was born with a serious gut condition – and a healthy diet with gluten and sugar-free recipes was key to his recovery.

With an eye on sustainability, she’s creating a zero-waste pear and lemon cake – that not only looks stunning – packs a flavour punch too.

Don’t miss this first demo of the day which will have plenty of food stories, and tastes too!

12.00pm: Claire O’Sullivan – Crough Wood Wellness
Healthy living with food and nature go hand-in-hand – and there’s no one more passionate about this ethos than Claire O’Sullivan of Crough Wood Wellness.

She’ll take you on a journey that shines a light on local and seasonal food, and how being outside, connecting with our environment, and taking a step back helps us to lead a more positive lifestyle.

Claire is a mushroom super-fan, and is making a delicious wild Waterford mushroom risotto with foraged garlic, barley, and cider from award-winning Legacy Irish Cider.

You will not forget meeting Claire – her immersive, magical, and deeply nurturing approach to nature connection with food and drink in the Comeragh Mountains, will leave you with a renewed sense of wonder – wow!

1.00pm: Paul Ryan of Barefoot Farm collaborating with Jenny Flynn of Faithlegg
One thing we do well in Waterford is showcase local producers on menus – and this is certainly true of our next guests – Paul Ryan of Barefoot Farm and Jenny Flynn, executive chef at Faithlegg.

Jenny has been a firm supporter of Paul’s work at Barefoot Farm, where he organically grows a vibrant range of mixed salad leaves and vegetables in Dunhill with his partner Fiona.

Jenny will create using Paul’s ingredients a standout dish of butter basted cod filet, crushed artichoke with salad, and a bergamot and honey dressing.

This exciting demo reveals the strong connections between producers and hospitality in the county – and how important it is for locals, and visitors to the region.

2.00pm: Krisztina and Wayne Halloran – The Olive Café
If you’ve ever visited The Olive Café in Waterford, you will have gone away with amazing food and drink tastes, and a strong sense of community too.

To reveal what is takes to run a successful café, and why using local producers is so important, we have our next guests – Krisztina and Wayne Halloran.

Having won awards for offering an outstanding café – the stage is theirs to make a Thai peanut salad with tempeh – a dish that has prompted customers to get ‘Instagram ready’.

Take time out to hear about this super-focused couple who love to make people happy through food and drink – and don’t forget to try their dish!

3.00pm: Cormac O’Dwyer and Katrina Murphy – Dungarvan Brewing Company, Liam McDonnell – Legacy Irish Cider, and John Wilcox – Blackwater Distillery
It’s hard to get three outstanding drink producers from West Waterford all in one place – but that’s what’s happening with our next demo!

Join Cormac O’Dwyer and Katrina Murphy from the Dungarvan Brewing Company, Liam McDonnell of Legacy Irish Cider, and John Wilcox of Blackwater Distillery for a fascinating talk on what makes their drinks respected on an international stage.

They’ll share their latest news, future developments, and talk about a new ‘collective’, as they join forces to promote their product range amongst Waterford’s hospitality scene.

Have your questions ready too, as this is a rare opportunity to have a trio of award-winning drinks makers on stage, and with a chance to have tasters – it’s not to be missed!

4.00pm: Judit McNally of Cocoa by Judit collaborating with Mary O’Sullivan of Beara Bitters
What happens when two multi-award winners from the food and drink world come together – something outstanding, that’s what!

Judit McNally of Cocoa by Judit, who’s just taken gold at Blas na hÉireann – the Irish Food Awards, is collaborating with Mary O’Sullivan, the latest member of Taste Waterford.

Judit and Mary will expertly blend a dish that captures the depth of chocolate, the savoury world, and an expert touch with bitters – an infused blend to add a hit of taste to cocktails.

Get to see the dish being created, ask questions, hear food stories, and try the food – what a way to end this year’s Taste Waterford demos!
