Waterford City is a place of firsts for food and drink.

The bacon rasher was invented in Waterford, so was the cream cracker. And the port was first to import teas, wines and spices into Ireland.

And it’s this melting pot of cultural and heritage connections, intertwined with Vikings and Huguenots, that has made Waterford today an exciting culinary destination.

Your tour guide Stíofán Mac Cárthaigh of StepsBackThruTime will take you on a walking tour to well-known spots, along with streets hidden with fascinating historical facts, like where coffee was first traded in Ireland. He’ll show you too how the modern cuisine of Waterford looks, and tastes, today.

There are three stops during the tour including The Reg in the Viking Triangle by Reginald’s Tower. Here you’ll get to taste blaas from Walsh’s Bakehouse – a soft white bun – and see the 900-year-old medieval city wall that runs through the spine of the bar.

Guests then experience the amazing creations of head chef and owner of Mara Restaurant – Luis Martin. With a stint in a 3-star Michelin venture in Spain, he’ll create a local and seasonal starter that embraces innovation, sustainability and flavours.

The final stop is the award-winning Momo Restaurant and the charismatic owner Kamila Bystrzonowska. She and her head chef will present the main course, and with it, a fascinating talk on why Waterford is a standout area for food and drink producers – many of which she uses on her menu.

This tour is unlike no other – with renowned eateries, entertaining hosts, and history that can only come from Ireland’s oldest city in Ireland’s Ancient East, you’ll go away with unforgettable memories that excite the senses.

6.15pm – House of Waterford Crystal

The tour starts at the House of Waterford Crystal where you’ll meet your tour guide for the evening – Stíofán Mac Cárthaigh.

6.30pm – The Reg

Your first stop is the popular Reg in the Viking Triangle, and perfectly situated to see Reginald’s Tower. This tasting will take you back 900 years and to the Huguenots at the end of 17th Century with their creation of the blaa – synonymous with Waterford. Walsh’s Bakehouse supply the blaas and chef from The Reg will showcase them with a range of delicious fillings.

7.30pm – Mara Restaurant

The starter is a prelude of exciting things to come, and Luis Martin – head chef and owner of Mara Restaurant does this with style! His starter will have you amazed at his innovation, flavours, and how his restaurant is winning praise for sustainability too.

8.30pm – Momo Restaurant

Owner Kamila Bystrzonowska of Momo Restaurant will present the main course, using Seagull Bakery ingredients, along with beer tastings from Hopfully Brewing. It’ll be a delight in seasonal and local produce, and one that tells a story, leaving you with complete satisfaction that can only come from this award-winning eatery.


Guests can go on to enjoy pubs and venues in Waterford, recommended by Stíofán MacCárthaigh.

Should you decide to cancel, 10 days in advance of the tour date is required for full refund. No refund will be given with less than 10 days notice.

Full payment is required before the Taste Tour commences.

Taste Waterford does not offer refunds or alternative dates for no-shows.

Should the minimum amount of people required for the tour not be achieved, the tour will be cancelled and you will receive a full refund.
